Cut from the bottom half of the pork leg, the hock is a chunky, four inch section of bone surrounded by collagen, connective tissue, and meat, all encased in a thick band of fat and skin. Sometimes referred to as pork knuckle, it is the joint between the tibia/fibula and the metatarsals of the foot of a pig. Hocks are cured and smoked, so they’ll lend a bacon/ham flavor to whatever you add them to. They are ready to warm and serve, but taste even better when simmered low and slow to loosen the tough muscle in this part of the leg. All of our cured pork products are nitrate-free and MSG-free.
