We Grow Fermenting Cabbages
Order the amount you need by weight. The heads range greatly in size from very large 10 lbs each to very small 3 lbs each. You will be a range of sizes unless you specify otherwise in your order notes.
If you order 20 – you will receive 20 lbs of cabbage. If you order 50 – you will receive 50 lbs of cabbage, not 50 heads.
Our kraut cabbages are very dense and high in dry matter. They have a nice peppery cabbage flavor and hold up well in the fermentation process. At We Grow, we have found that they are still crunchy after an entire winter in the crop. These cabbages can be used as a fried cabbage or in soups, but they are so strong that they are a bit too chewy for a slaw recipe in our opinion. They weigh significantly more than summer green cabbages by volume.
