Kohlrabi is a cruciferous vegetable, just like cabbage, broccoli and kale. It is a member of the brassica family. The round, swollen stem is about the size of an apple and can be eaten raw or cooked. Both the stem and the leaves are edible. The taste and texture of kohlrabi stem is similar to those of a broccoli stem or cabbage heart, but milder and sweeter, with a higher ratio of flesh to skin.

Kohlrabi stems (the enlarged round part) have a layer of thick skin that should be peeled more on the bottom side and less or even not at all on the top side. The flavor and texture is very similar to broccoli stem, but with a flavor that is sweeter. It can be used interchangeably in dishes. The bulbous kohlrabi stem is frequently used raw in salad or slaws. Kohlrabi leaves are edible and can be used interchangeably with collard greens and kale.
