Description

Pea shoots from field peas are the young, tender tips of field pea plants, harvested when they are a few inches long and feature a few leaves and immature tendrils, sometimes including flower buds. They offer a mild, sweet, pea-pod flavor and a crisp texture, similar to snow peas, and are a good source of protein, vitamins A and C, and folic acid. Harvested while still green, they are eaten raw in salads, lightly steamed, or used as a garnish. We grow over several acres in our fields every season.
