This specialty cheese is always on-hand in our house for grilled cheese or anything melty.<\/p>\n<\/div>\n<\/div>\n<p>Our friends at Tomandl Farms are officially releasing their <strong>havarti-style cheese<\/strong> (aptly named Abby Lane) made entirely from the milk of their grass-fed, seasonally grazed cows. Their farm is right here in our area, so all of the seasonal nuances of our climate, our soils and our landscape are included in this cheese.<\/p>\n<h3>PRODUCT HIGHLIGHTS:<\/h3>\n<p><strong><span class=\"T286Pc\" data-sfc-cp=\"\" data-processed=\"true\">This havarti-style cheese has a supple buttery taste and texture perfect for recipes or snacking. It goes well on grilled cheese, pizza, charcuterie boards, and more<\/span><span class=\"T286Pc\" data-sfc-cp=\"\" data-processed=\"true\">. This cheese is made with 100% milk from Joe and Abby Tomandl\u2019s family&#8217;s grazing dairy farm; the milk is grass-fed and pasture-grazed, regeneratively farmed, and certified organic. <\/span><span class=\"T286Pc\" data-sfc-cp=\"\" data-processed=\"true\">Made by hand by skilled cheesemakers using traditional methods.<\/span><span class=\"uJ19be notranslate\" data-wiz-uids=\"E8zEF_15,E8zEF_16,E8zEF_17\" data-processed=\"true\"><span class=\"vKEkVd\" data-animation-atomic=\"\" data-wiz-attrbind=\"class=E8zEF_15\/TKHnVd;\" data-processed=\"true\"> Best eaten at room temperature.<\/span><\/span><\/strong><\/p>\n<p><em>Tomandl Farms is\u00a0well-known for their involvement in not only practicing but teaching regenerative dairy farming systems through the <a href=\"https:\/\/www.dga-national.org\/programs\/dairy-grazing-apprenticeship\" target=\"_blank\" rel=\"noopener\">Dairy Grazing Apprenticeship Program. <\/a>Receiving the Leopold Stewards of the Land Conservation Award.<\/em><\/p>\n<p><em>Joe and his wife Christy Tomandl, both former teachers, started their farm not long before daughter Abby was even born. The original 80 acres farm was built upon values of conservation of the land, water and soil. They chose to raise a dairy breed known for its grazing efficiency, New Zealand Friesians. The cows are fed harvested perennial forages during the winter. A managed grazing system for the herd protects the farm\u2019s woodlands and wetlands, and grazing is delayed in some areas for grassland nesting birds.<\/em><\/p>\n<p><em>The Tomandls exceeded the soil conservation requirements of Wisconsin\u2019s Farmland Preservation Program. Their cropland\u2019s soil erosion rate is nearly zero. The University of Wisconsin\u2019s Marshfield Agricultural Research Station called their system the gold standard in soil health for coupling farm profitability with environmental benefits like improved water infiltration and proven carbon sequestration.
