Salad turnips are different from regular turnips. We think they are considerably better! They are less starchy and have a higher moisture content than traditional purple top turnips. They are meant to be eaten raw or lightly cooked and have a tender texture and sweet taste which makes them great raw in salads or snacks. In our house, they are preferred over radishes by the entire family. If you decide not to eat them raw, the best way to cook them is to slice them and sauté gently in butter for 10 minutes or until softened.
Save the greens! They can be added to your lettuce and spinach for a delicious mustard green flavor in your salad mix. And very nutritious!
Salad turnips will last longer if stored without the greens attached. Keep in the crisper drawer of the refrigerator.
