Braunschweiger is a spreadable liver sausage that gets its name from a town in Germany called Braunschweig. It is made from cooked liver and meat trimmings along with a blend of spices and seasonings. Advocates love it, critics raise their nose, and many unknowing souls haven’t a clue the deliciousness that awaits. It can be served on crackers with black pepper, rye bread with a spinach leaf or even on slices of cucumber with cream cheese and dill. Though oftentimes it is just eaten plain in our house.
